国内外の品質の良い魚を選定し、厳重な検品のもと、仕入れをしています。
Building on our long experience as a discerning eye for fish, we select high-quality fishes from domestic and international sources and purchase fishes that have passed our strict inspection.
こだわり弐 技術
魚をさばく匠の技には、昔から定評がありました。魚の品質を損なわないよう、スピーディ加工するための最新の機械設備を導入した現在においても、手間をかけて加工処理し、漬け込む手技を継承し、よりよい品質の製品づくりに日々努めています。
We have a long-standing reputation for our fish gutting and cleaning techniques. Today, we are making daily efforts to improve the quality of products by relying not only on innovative equipment for speedy processing to avoid degradation of the quality of fish but also on our manual processing and marinating techniques that we have inherited.
こだわり参 味
素材の持ち味を活かすため、調理加工に使用する水や調味料を厳選しています。たとえば、甘口たらや、漬魚などの下味つけには「滅菌海水」を、食塩は天日塩を使用。漬魚類は、安全で選りすぐりの調味料を仕入れ自社調合、一切れ一切れ丹念に漬け込み、味わい深いおいしさに仕上げています。
To bring out the natural characteristics of raw products, we meticulously select water and seasonings that we use for cooking and processing them. For example, “sterile seawater” and solar salt are used when mildly salted cod or marinated fish is seasoned. For marinated fish, we procure safe and carefully selected condiments, uniquely blend them as appropriate, and attentively marinate each slice of fish to bring out its deep, rich flavor.
こだわり四 温度管理
生産工程においては品温の徹底した管理を行っています。冷蔵、冷凍庫は毎日温度確認を行い、併せてコンピュータによる２４時間温度管理もしております。
Throughout our production processes, the temperatures of products are strictly controlled. Temperatures inside refrigerators and freezers are checked daily and are under computerized 24-hours control.
